Widely eaten, locally grown bamboo
Most people think of bamboo as hard wood-like semi-hallow tubes that you would not consume. However, certain varieties can be eaten while still young.
In North American Asian food markets bamboo is mostly available canned. On occasion you may be able to find fresh unprocessed bamboo. In Laos, they are only available freshly picked.
In these photos, I show you the before and after the peeling of fresh bamboo. My first time doing such a thing. Peeling away the outer layers bit by bit and chopping off the tips and bottoms. Leaving only the tender internal bamboo shoot.
