Dried and cut buffalo hide is sold at food markets across Laos. It's a common ingredient in 2 popular Lao dishes. One is a famous sauce called jaew bong and another is a stew called aw lam. They're unlikely ingredients made into something scrumptious.
After buying them, the cuts of hide are further processed by the cook at home. The additional process helps to get rid of any hairs and softens it.
